I recently started making my own nut butter as a way to save money and get exactly all the goodness I want with out added sugars and other unnecessary ingredients. You will need a food processoror another powerful high speed blenderto pulverize the nuts and coconut into liquid form. It is so easy and comes together so quickly, I wish I had done this years ago! I like to make a large batch and this makes about 3 jars so you can cut ingredients in half if you aren't going to eat it regularly. Although it will keep for at least a month or more. This recipe I chose specifically for a keto friendly diet (and because it's insanely yummy). If you have different dietary needs or are just ready to try switching to home made from store brought peanut, almond, sunflower seed or cashew butter, I'll lay out how to do that below.
* I claim no responsibility if you can not stop eating this yummy goodness!
Set up your food processor. Add all ingredients starting with all the nuts, then coconut, lastly vanilla, salt, cinnamon and sugar substitute. Start your food processor and it's like the old commercial "set it and forget". I like to check out the progress after 5 min. It will go from solid to dry and chunky to that magical liquid goodness.
You can use another high speed blender but, make sure it is powerful enough to grind down to liquid form. I first attempted this in my nutribullet because I tend to try to use it for everything but it just didn't have enough power to get the job done.
If all of your ingredients do not fit in your food processor at once, start with as many nuts as you can fit, then add in the coconut as the nuts grind down providing more space, and lastly add the vanilla, salt, cinnamon and sugar substitute.
Although I have given you approximately the amounts that I use, feel free to adjust salt and sugar amounts to your taste. Additionally you can use coconut or cane sugar if you are not concerned about your sugar intake. My taste tester who is very sensitive to stevia and other sweeteners (she's not a fan of them) loved my recipe just as much as me!
Basic Nut Butters
Want to make a super simple switch to your favorite store bought nut, peanut or seed butter? Simply throw in a few cups of peanut, almond, cashew, sunflower seed, hazelnut, or any other option your heart desires with a tsp. of salt and let the food processor do it its thing on high speed for 10min. Taste test to see if you would like more salt. And if it has not liquified enough, grind down another 5 minutes. It really is that easy!
Please leave a comment below if you try out this recipe and let me know what you think. Or if this helped you to make nut butter for the first time. I would love to hear from you!
